
Bee Bread: Natural Comb Cell Bee-Fermented Pollen from the Forests of Latvia
High-quality raw forest bee bread from a small-scale natural Latvian beekeeper. Freshly harvested from September 2024. Though not certified organic, which is expensive for small operations, they rigorously follow organic principles.
Bee Bread is the protein-rich superfood made by bees, while honey is the carbohydrate-rich fuel. Bee bread has been consumed by bee keepers and their communities for thousands of years, for nourishment, and protection. More recently, bee bread has been labelled as a "functional" food or medicine due to its impressive repertoire of constituents.
In many respects, bee bread is genuine bee pollen. You see, bees do not eat the flower pollen they collect directly; it is neither sufficiently digestible or nutritious for them, and unless bee bread is made, the bees would simply not survive. Pollen must first undergo an "alchemical transformation" in the comb cells of the hive, where it is fermented for approx 3 weeks - the result is called bee bread. Bees do not eat pollen, they eat bee bread. Bee bread (like honey) is a hive product, pollen is not.
Bee bread is about 20% proteins, 24-34% carbohydrates and 1.5% of lipids.
Bee bread has a large variety of trace and macro minerals including high quantities of iron, cobalt, phosphorus and calcium. It is one of the very richest food sources of selenium. Bee bread is also an excellent source of potassium and is rich in the B-complex of vitamins. Amino acids, which are predigested for easy assimilation in the ratio that the human body needs, constitute about 20% of the dry substance of bee bread. It is a natural biostimulative nutriment, rich in antioxidants, flavonoids and other active biological compounds.
Due to its invigorating properties it is recommended to eat your bee bread first thing in the morning. The amount of bee bread recommended as a preventive medicine is one teaspoon per day. Use two to three teaspoons of bee bread per day for treatment of different disorders. Bee bread is excellent taken alongside shilajit.

When the bee brings pollen back to the hive, they put it into the comb cells. After the cell is filled up to 2/3 with pollen, the rest is filled with honey and a small amount of probiotic-rich bee salvia and finally sealed with wax. Then anaerobic conditions appear. Anaerobic bacteria in synergy with a large variety of microbes, innumerate strains of beneficial yeast begin their work. Complex chemical structures are broken into simple bonds, for example proteins are broken into amino acids (in this way a lot of lactic acid and vitamin K is formed). While fermenting the pollen's inner container cell is broken down into substances that are easier to absorb. The lactic acid also can then be converted to glucose in the body, which is the main source of energy used throughout the body. After three weeks of fermentation the sweet and sour tasting beebread is ready.
